Saskatchewan Mashed Pumpkin
INGREDIENTS:
3-4 cups Pumpkin, cooked, mashed        Saskatchewan Mashed Pumpkin
1 Onion
2 tablespoons Olive Oil
1 Bell Pepper
Salt and pepper to taste

DIRECTIONS:
  1. To cook pumpkin, clean one pumpkin and peel it. Cook until soft. Then, mash it with a mixer.
  2. Re-heat mashed pumpkin in a large saucepan.
  3. Thinly slice the onion and fry in olive oil until golden brown.
  4. Mix browned onions into pumpkin.
  5. Add coarse salt and fresh ground pepper to taste.
